Asparagus Salad

Ingredients

Sauce:

 

5 tbsp plain yogurt

 

3 tbsp mayonnaise

 

2 tsp snipped fresh dill

 

2 tbsp minced onion

 

 

Salad:

 

1 or 2 tomatoes

 

2 lb asparagus spears

 

 

 

Directions

Whisk together ingredients for sauce and set aside.  Remove seeds from tomatoes, dice and set aside.  Cook asparagus in boiling, salted water just until tender (approx. 4 minutes).  Drain and put in ice water until cool.  Pat dry.  Arrange on a serving platter.  Spoon sauce across asparagus in a wide band.  Scatter tomatoes over sauce.  Garnish with additional dill. 

 

Makes 6 – 8 servings.
